Knowing with Whom - Crossing Boundaries between Hospitality Education and Industry

This chapter centres on the key question for hospitality educators and practitioners: how does crossing boundaries and learning at these boundaries enhance their collaboration in DBL? The chapter aims to share experiences, drawing on insights and practical guidance from the Cultural-Historical Activity Theory (CHAT) and Boundary Crossing practice (BC) (e.g. Akkerman, 2011; Engeström, 2001). First, the chapter explains CHAT as both a theoretical framework and a practical approach for exploring collaboration between practices. Additionally, we describe potential learning processes at the boundary. Second, it presents findings from an exploratory research study conducted at the HMSL, demonstrating the advantages of working with both CHAT and BC to co-create various approaches to collaboration between education and industry, as well as between educators and industry practitioners.
