Enzymes are biocatalysts that have immense potential to transform agroindustrial food waste into a sustainable zero-waste industry through the commercial production of value-added products. The use of enzymes in food preparations is an age-old process, but with the advancement of technology and the production of novel enzymes, the door has opened for enzymes to a wide range of applications. One of those is the enzymatic treatment for the valorization of industrial wastes. The present chapter discusses the recent advancements in enzymatic treatment in food industries for the utilization of food processing waste and converting it to useful products. A comprehensive list of enzymes used in food industries and their application in different types of food waste has been discussed.
