Exploring the lived experience of food insecurity through the camera lens: A photo elicitation study.

Healthy eating remains unattainable for many due to limited access to affordable, nutritious foods. In the United Kingdom, over 11% of the population is estimated to be food insecure. This study explored the lived experiences of adults living with food insecurity and examined how these experiences shape their dietary health behaviours. Using a photo-elicitation approach, food insecure adults (N = 9) photographed their food environments. The photos were used to guide semi-structured interviews which were transcribed and analysed using reflexive thematic analysis. Participants viewed healthy foods as inaccessible, causing reliance on cheaper, more calorie-dense options. Participants observed increasing food insecurity among people in full-time employment and described food bank support as inconsistent and often complicated by stigma. Findings illustrate the multidimensional nature of food insecurity, influenced by economic hardship, limited food environments, and social change. Policy responses must address structural barriers and enhance the accessibility and dignity of food support.
